This July, Rossini’s at Sheraton Grande Sukhumvit, a Luxury Collection Hotel, Bangkok presents A Journey Through Tuscany with Banfi, an intimate five-course evening in which each dish draws from a different corner of Tuscany, and each glass carries the story of the land that shaped it.
Rather than a simple pairing menu, Rossini’s Chef Stefano and his culinary team have composed a progressive dining experience that traces the landscapes, traditions and culinary heritage of one of Italy’s most celebrated wine regions. From the Mediterranean coastline to the rolling hills of Montalcino, guests move through Tuscany course by course, discovering how local ingredients, time-honored recipes and Banfi’s celebrated wines converge in quiet harmony.
The evening opens, as any Tuscan gathering should, with an unhurried aperitivo. A crisp Pinot Grigio is poured alongside artisan salumi, aged Pecorino, chicken liver crostini and traditional baccalà, a first taste of the conviviality found in a Tuscan wine bar, where conversation flows as freely as the wine.
From there, the journey turns toward Livorno, the historic port city where sea meets vineyard. An elegant interpretation of salted cod arrives with delicate potato cream and a refreshing tomato ice cream, finished with Taggiasca olives and capers. Paired with Banfi La Pettegola Vermentino, the dish balances warm against cold and savory against sweet, capturing the freshness of a Mediterranean breeze drifting in off the Tuscan coast.
Inland, the terrain shifts again. A rich Carnaroli risotto with black kale and a slow-braised wild boar ragù pays tribute to one of Tuscany’s most treasured culinary traditions. Alongside it, the legendary Banfi Brunello di Montalcino lends its depth and elegance to the dish’s earthy richness, a pairing that quietly explains why Brunello remains among Italy’s most revered wines.
As the evening arrives in Montalcino itself, Banfi’s flagship wines take their place at the center of the table. Here, guests encounter the philosophy that has made the Banfi estate an international benchmark for Brunello di Montalcino: a devotion to craftsmanship, innovation and an unwavering respect for Tuscan terroir. Each pour unveils another chapter of the estate’s story; each dish, another expression of the flavors that have defined the region for generations.
